The people of TikTok are nothing if not creative, especially when it comes to the kitchen. And right now there’s a particular pairing that is taking the social media platform by storm: adding jalapeño peppers to sauvignon blanc or rosé. At first, this combination sounded pretty absurd, but after watching a few videos of people trying it out, it’s safe to say that the internet is onto something. And the reason why might surprise you.

When Food Network chef and co-founder of the organic and zero-sugar wine brand, Kind of Wild, @katieleebiegel first dropped slices of jalapeño peppers, she didn’t really notice much of a difference.  But once she allowed them to sit in the glasses for a few minutes, that’s when things started to get interesting. “I think after it marinates it’s actually pretty good because it opens up your taste buds and the spice makes it more juicy.” She points out that’s a great trick for upgrading a not-so-great bottle of wine.
